Don't know if it makes a difference, but when I've needed to use two ply the project was small enough that I could press them side by side in the vacuum bag, or one after the other, the first day, and then glue the pair of two plies to the core the next day. My understanding is that the purpose if using two plies front and back is to balance glue curing stress on both sides of the core.
Can you do another test pressing, even if using different veneers, putting together the two ply pairs one day and pressing them together to the core the next day, and evaluate for warp a couple days later? When the completed pressing comes out of the bag, lean against a support almost vertical overnight so that the two sides dry evenly.
