Has the top already been cut to size? Or, is it still a blank?
If it is still a blank, one might consider using a CNC router to cut the path for the stringing, then cutting the profile. All of this would be done while the blank is held in place on the CNC router table. Using a CAD program to design the top shape, and the 1" inset, should be relatively simple. First, design the profile of the part. Second, add an offset at 1" in from the profile.
Do you know someone who has a CNC router? And, try some samples first to be sure that the inlay path is machined properly. It might take a little bit of experimentation with some different bits to get the correct results without any tearout. But, once the right bit, etc., is selected, the results should be perfect, and, IMO, a lot less stressful than handwork.
