I have some direct experience here. I built a large dining table with shop sawn mahogany. The veneer dressed out to just shy of 1/8". It warped in short order, curling up at the edges in our dry winter air. I cut the table apart to see exactly what happened. The glue held fast, but tore chunks from the mdf core. Darryl suggested at the time that a plywood core might work, but I didn't take any chances. For the rebuild (at my expense, of course) I used 1/16 inch from Certainly Woods over a plywood core. To date, there have been no further problems.
