I was approached to see if I can veneer walnut on a 8 foot oval tabletop that is veneered itself. I read that crossbanding is a possibility but they may not want the veneer to run that direction... Any thoughts on this ??

The new top layer will be subject to any glue adhesion issues under the current layer and any adhesion issues with the finish on the current layer. A two ply added to the top and bottom would leave a thickish veneer edge that might be caught and lifted during use.

I say strip the existing finish both sides.
If you want the new veneer going in the same direction crossband first & then layer with new

It might be easier, more reliable, and less expensive, to simply build a new top from scratch.

I turned down a similar project last year. The customer wanted me to "restore" an old table by adding/repairing the veneer. Evidently they wanted to do so because of the "sentimental value" of the piece. When I pointed out the issues, they simply said ok. Then, they tossed the table in the dumpster. They originally had no idea of what was involved in a repair, but respected my opinion. I still get a lot of new work from this customer.
