Now I have bought three pieces of 4 X 8 X .75 mende board ( 3 ply fir core + 1/8 MDF faces ) I see they are not flat. 3/16" bow over 3'. I wonder if my 3 ply faces ( 3 ply for needed thickness ) will be able to flatten the mende board. I use Unibond and the hard glue line will lessen spring back, but I get one shot with the faces and can't afford spring back.

I've seen the stuff & can imagine some advantages but haven't tried it yet. With what you are describing I don't see it getting any flater or staying that way. I have had some success with "lami ply"
which is completely veneer core & reasonably flat, but I pretty much always return to mdf.

What are the final sizes of the panels? Are you veneering the whole sheet and then cutting up the pieces you need?

If the budget allows in the future you may want to consider using bamboo plywood. It hasn't gained any popularity as a substrate to veneer over due to the cost.
