Is there a prefered side of BE maple to glue down. I have heard that the BEs can pop out. How can you determine which side would be the correct side? I tried looking at the end grain at a BE with a 14 magnifier but coul not tell a thing. I'm talking rotary cut.

If your book matching it wont make much of a difference, if its one piece look at the face of the veneer for knife marks, which is considered the loose side. loose side up.

I agree with craig on the bookmatching: it will not make a difference.

I have run my fingers across the surface and felt for the "bumps" or eyes. Then, I put the bumps down. My theory is that if, for some reason, I do not get enough glue in the "valleys" underneath those "bumps" then they may pop up during finishing and get sanded off. This would obviously lead to holes in the veneer and a fatal mistake.

However, with book-matching I just need to be very careful to get adequate glue on the veneer as well as the substrate (I know this is not a normal procedure) so I do not have glue failure. I use my glue applicator to apply enough glue to fill those "valleys" on the veneer itself. This is similar to what I have been taught for getting a full glue line with taped-up marquetry work.

Good luck!

Somewhere long ago and far away, I read that the eyes are little cones, so they only can come out on one side. If using a single piece, glue with the large diameter side of the cones towards the substrate, so they are mechanically trapped.
As already pointed out, if book matching obviously one piece will have the large diameter up and one the large diameter down. In that case one can cover the entire show side with 2" veneer tape to hold them in place until the glue cures. To avoid unbalanced stresses, I'd apply the veneer tape to both pieces of BE, not just the one with the large diameter up.
