in theory, you shouldn't have any trouble. in practice though, who wants to risk a beautiful piece of veneer? i've used a technique for this situation before that is called (at least around here) "rim-raising" the panels. basicly, you edgeband your substrate with solid wood that is just wide enough for the edge profile. then veneer both sides, and run 'em through the shaper. solid edge, veneer face, stable substrate. and as an added bonus, since you miter the solid wood edges around, there's no end grain on the top and bottom of the panels.
