If pressing a thin flat panel on both sides at once (to avoid warping), would a mesh on one side (the non-show side) be the preferred method?

I'm guessing mesh would be better than a platen, as a platen's grooves would leave unpressed areas on the panel...

You dont need the mesh at all when youre using a platen board. The only reason to ever use the mesh is when you dont have a platen board in the bag. Platen boards are always better for veneering on top of and to evacuate the air more efficiently. You need a caul between your veneer and platen as well as the bag. Veneer should never come in direct contact with the bag, platen or the mesh, except in special circumstances.

The platen will not leave unpressed areas on the panel. I never make my grooves in the platen any closer than 12” on center and the air evacuates just fine. When a panel is in the bag you just need a general evacuation method.
