I look at the curing in stages. Temperature is most critical in the beginning stage, from when you clamp the work until its fairly hard. A ways beyond the firm rubber point. I think you are turning down the heat a bit too soon. The second stage is when it comes out of the vacuum bag as the moisture and volatiles need to leave the glue line to become really hard. Now the temperature becomes less critical. The third stage is when the glue become fully rigid which really takes a couple of days. In fact to achieve that absolute final, final rigidity can take up to four days depending on the temperature throughout the entire process.
