Although you can do it either way I'm always a fan of edging with solid afterward, even if it's just veneer, I edge last.
Two reasons. One, when I edge afterwards it allows me to glue up the veneer and panel at the same size with no veneer overhang. This way I trim the panel afterwards and don't need to be so fussy with applying the veneer. Second, a veneered panel captured with solid wood protects it from getting chipped down the road. A little nick in the solid can be repaired a lot easier than a chip out of the veneer.
If you do veneer the edges I have never found you can see it standing out done one before or after. By the time you soften the edge even the slightest amount you cannot see which was veneered first , the edge or top.
