I consider epoxy and Unibond 800 both equally high quality glues for bonding veneer. Both are catalytic which bond and cure by a chemical reaction. If I was gluing the hull of a boat together I would choose epoxy over Unibond 800, but for marquetry this really does not apply. Although both glues have gap filling abilities epoxy clearly has much more than Unibond. Epoxy's big disadvantage in my opinion is its high saturating tendency. This causes excessive bleed through of the veneer, which is a major hassle to remove. Unibond will also bleed through but nowhere near the degree of epoxy, and will also sand much easier. For that single reason, I usually steer away from epoxy for veneer work.
You mention epoxy giving a better bond, I am not aware of that and would be interested in your reasons.
My suggestion would be to try both and see what you think. Since both are excellent glues, you won’t go wrong with either one.
