Using water to make veneer pliable enough to press it directly is somewhat risky, especially on larger panels. Two problems, first the water and glue are competing for the same space within the veneer. The glue line can be easily compromised. Second, the water makes the veneer swell excessively and then it is pressed in this swelled state. As the veneer finally shrinks as it will in the end, the veneer joints can open slightly and small fissuring can develop as well. Its one thing to do this on a molding its much different on a whole panel. Im not saying that these things will absolutely happen in all cases but there is a good chance of it. For panel veneering I would recommend going through the flattening process even though it's time consuming.
