Like Mike said, a simple test will tell you most of want you need to know. In general a small amount of bleed through will not affect the veneer as long as you scrape and sand all of it off. If you have a lot of bleed through that could be a problem. This is where a sample would come in handy to get the feel of glue amount and double checking for any staining of the veneer.
If you want to completely eliminate the possibility of any bleed through you could size the veneer with 4 parts water to 1 part yellow or white glue. You would have to go through the standard flattening process to do this. Search this forum for "how to flatten veneer" to get a full description.
