Does anybody have any experience using pink sheathing foam insulation as a lightweight core (under thin MDF skins)? Does the Unibond stick to it?

Llyod,

Yes, you can use the pink or blue building insulation as a core for forms.

If you want to glue something to this core with Unibond 800 I think the bond will be questionable. If you're just talking about if glue drool and drops will stick to it, then the answer would be yes, for the most part.
