The size of the block is not all that critical, enough to do the kind of dovetail you are creating plus a little extra. Spline it, tongue and groove, biscuit, some might even just use a butt joint. Make sure you have a sub layer of veneer over this joint as you never want the final face veneer pressed direct over any glue joint, especially one like this made up of dissimilar materials.
Lets say the curved mahogany crotch panel you saw in my video with the short grain border is being turned into a drawer front. Here are the steps I would go through to make it. Lay up the bending ply, attach the solid block to both ends, veneer the front and back with a two ply veneer pressed up earlier, (this two ply includes that sub veneer I mentioned) cut the drawer front to size, and finally glue the short grain border on the edges. Now you are ready to cut in the dovetails.
If you wanted a small bead around the edge of the drawer front I would add it afterwards rather than trying to incorporate into this block.
Others may have different approaches, this is the way I would do it.
