Well, you mean replacing the hard upper caul completely?
I wouldn't recommend it. One vital purpose of having an upper caul of hard material is that it will remain flat and get rid of any bubbles or rippling.
Without a hard upper caul, you will end up with areas that are high spots, and areas that are low spots...not flat. The caul takes the bag pressure and equalizes it across the span of the piece. A bag will not press perfectly flat on it's own.
(I know this because I tried it once, thinking that upper cauls were unnecessary....they are! I had to take the entire table top to a wide belt sander and start over with that side.)
