can I use a 4 x 8 and 4 x 4 MDF sheet and glue and screw the 2 pieces together for a 4 x 12 platen? I will glue a 4 x 12 lam. sheet on top and then groove.

Cliff,

Most definitely.

You really dont even have to attach the two sheet to each other. I just put in a spline or use biscuits to line the sheets up and make sure the grooves follow through from one sheet to the next. As long as the table your bag is laid out on is flat the two platens should sit flat as well.
