Is it possible to build a jewelery/humidor size box of mdf, assemble it, then veneer the exterior using a vacuum bag system?

Dave,

Definitely, all you need to do is provide internal support so the vacuum press cannot crush your box. Simply put a block of rigid foam building insulation inside the box as you are making it. It doesn't need to fit snuggly side to side provided its not to high, only top to bottom.
