My rule is no bleed through on a closed grain wood like maple and just a small amout of spotting here and there on a open grain wood like mahogany. Getting just enough glue is definately a feel thing. In my opinion its better to have a little to much glue than not enough. If you have any bleed through at all you know you there was enough glue. Bleed through says there was a sufficient amount at the joint and then some extra which ended up coming through the surface.
Ultimately you know if the joint is starved if you can peel the veneer off the substrate. This is why I think an addition test piece is a good idea during the learning phase or when you are working with a new veneer for the first time.
