I recently took a veneering workshop from Darryl down here in the South. We did a 4 way match with some cross grain edgebanding. To cut the miters, we used a piece of 3/4" MDF with a 135 degree angle cut on one long end. That was a bit thick for our razor knives to cut the included miters, so I made a template which you all might find useful.
I cut a piece of 1/4" thick clear polycarbonate plastic about 18" long and 5" wide or so. On one end I cut a 135 degree miter and cleaned that up(not too fussy though since the template cuts both mates of the miter at the same time). I blacked the reference and measuring edges of the template with a black Sharpie to increase contrast with the veneer. On the back side of the template (as I use it), I ran a strip of 2 inch wide carpet tape along the measuring edges (following the angle) and about 1/4" in from the edge. This allows me to view the veneer face down thru the template. I then adhered some 120 grit aluminum oxide sandpaper to the carpet tape and razored off the excess sandpaper. The friction from the sanpaper pretty much keeps the template from moving on the veneer when I do the miter cuts (just tape the veneer down on the cutting surface).
