Subject : Finishing Western Fiddleback Maple

I am about to finish a table made mostly of Western Fiddleback Maple & Sapele for the second time (I was not happy with the results from the first time). I would like to use a water-based lacquer for the top coat. I have read many articles on how to "pop the curl in curly maple". One article suggests first applying danish oil, followed by blonde shellac followed by the water based lacquer. Another article suggests simply using a mix of blonde and garnet shellac for the first coat followed by the water-based lacquer. My goal is keep the maple as neutral as possible and simply bring out the curl in the wood. I would rather stay away from using dyes. Do you have any reccomendations for simply accenting the figure of the wood and maintaining the natural light color?
